Freezer Cooking: Dairy Free Waffles and Apple Bread
If you read Money Saving Mom you may already know that she just started a series for the month of May called 4 Weeks to Fill Your Freezer. Well I am super excited about this series. In week one she is working on breakfast items and the idea is to make 1 item each day to go in the freezer (except on Saturday and Sunday).
If your like me and have a fear of even attempting an all day freezer cooking event you may just want to check out her series. I have tried some freezer cooking before. Last summer I even did this but I just couldn’t get past the baked goods onto other meal items. I am hoping that this series will help me get past that freezer cooking hump.
The series just started on Tuesday so you still have plenty of time to catch up! Crystal has recipes and even a grocery list for the supplies you will need.
I wasn’t home on Tuesday so I started yesterday.
Now the actual items I make may not be exactly the same as Crystal’s due to allergies, preferences, etc. but I hope to at least do the same amount of items she does in this series.
Yesterday I made:
- a double batch of Dairy Free Waffles
- Homemade Chocolate Syrup (this doesn’t go in the freezer, but since I was in there baking I decided to make it for the girls. I don’t make it very often and they enjoy it so much)
- 2 loaves of Apple Bread
I took Crystal’s Banana Bread recipe and replaced the bananas with 4 apples that I shredded in my food processor. I also cut the sugar by 1/2 a cup and used almond milk. The bread came out so good!
I cut each loaf in two and let the girls munch on one half after school. The I froze the other 3 halves. Since the girls will be the ones eating the bread and not my husband and I, I decided that only pulling a half out at a time would work great.
I think that was a good start for my first day. I plan to do updates with what I made each day and hopefully by the end of this month I will have a nice full freezer.

If I wanted to use a jarred natural applesauce that I already have on hand, do you think it would work in that recipe and how much would you recommend?

I think applesauce would definitely work. For reference here is a recipe for Applesauce Bread http://allrecipes.com/recipe/applesauce-bread-i/
They use 2 cups in this particular recipe and I think if I was using applesauce for my apple bread I would probably use 1 1/2 – 2 myself. I think next time I may just make it with applesauce.
