Menu Plan Monday 10/24/11

Last weeks menu plan went off pretty well considering Jonah, my husband and I all came down sick.

Thursday I was sick and ended up throwing a bunch of ingredients to do a mexican soup in a big pot bringing it to a boil then turning it down low to simmer for a few hours.  The soup was better received than I think the beans and rice would have been that night, the best part is that I used the beans and rice ingredients in the soup.

Saturday was the first day I felt better and I was flat out exhausted so we ended up ordering pizza and had the soup/sandwiches on Sunday.  That means I didn’t make the Meatza two weeks in a row.  I will get to it eventually I’m sure.  ;)

As for this week we have a guest staying with us.  A lady that I go to Church with is hosting a foreign exchange student from Denmark for the school year and she will be staying at house from the 25th – 1st.  We are excited!

Here is my plan for this week.

Breakfast options:  Eggs, Bacon, Oatmeal, Cereal, Fresh Fruit, Yogurt

Lunch options:  PB&J,  Meat and Veggie Wraps, Veggie Burgers, fresh fruit/veggies, nuts, pretzels, yogurt

Dinners

Monday:  Tacos on whole wheat tortillas, veggies in ranch dip

Tuesday: Grilled Cheese (Emeri will have Vegan Cheese), Blue Corn Chips, Fruit/Veggies

Wednesday: Burgers – we will be having the option of Veggie Burger or Havestland Turkey Burgers, Fries, Veggies and Dip

Thursday:  Whole Chicken in a Bean Pot, Roasted Red Potatoes, Corn on the Cob

Friday: Frozen California Pizza Kitchen (Except for Emeri, she will eat whatever she wants)

Saturday:  This will be a busy day so it will probably be Free For All

Sunday: Fall Fest at Church
