Whole Chicken in a Bean Pot

My family has been a fan of the Whole Crockpot Chicken for a long time now.   My girls will go to town on the chicken meat.  The only problem we have with the crockpot chicken is that sometimes, if the chicken is in too long it starts to get a little dry.

After receiving a Bean Pot from a good friend I started checking out recipes online.  I used it first to make Beans and Rice and it came out so good and was so easy.  Then I read that you could do a whole chicken in it so I figures I should give it a try.

I simply thawed my chicken and removed the innards.  I put the chicken in the pot, breast up.  I drizzled some Ken’s Balsamic Vinagrette over top.  Then I cooked it in a 350 oven for 1hr 15 minutes.  Then I removed the lid and cooked for another 25 minutes.

As you can see from the picture above it came out nice and golden.

We had a super simple meal of shredded chicken, green beans and sliced tomatoes.  So I be you are wondering how it tasted?

It was delicious!  I mean really delicious!!  As a matter of fact my husband and girls all said it came out so much  better than in the crockpot which we previously loved.  My husband also made the request that I ONLY cook whole chickens in the Bean Pot from now on.

Have you ever cooked with a Bean Pot?  I had never even heard of them until a few weeks ago.
