Barley Burger Stew

Barley Burger Stew is one of the meals we had this past week. I found the original recipe here and I did make some changes according to what we had on hand.
- 1 pound Laura’s Lean ground beef
- 1/2 c. chopped green onion from the freezer
- 2 1/2 celery stalks diced
- 2 cans diced tomatoes
- 2 cups water
- 1/2 cup medium pearl barley
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- garlic and Red Pepper Flakes to taste
Directions
1. In a saucepan over medium heat, cook beef, onion and celery until meat is no longer pink; drain. Stir in tomatoes, water, barley, and all seasonings. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until barley is tender.
This came out very thick and hearty. We crumbled some colby jack cheese on top and it was delicious. Everyone liked it and I will be making it again.
