Ultimate Chocolate Brownie Muffins, Oatmeal Apple Cookies and Banana Bread
So I decided I would finish up the rest of my freezer baking day recipes so I can move onto something else. Since I decided to only post one recipe every Thursday it was really dragging out and I just want to get this list completed.
Ultimate Chocolate Brownie Muffins – I got the original recipe here
Here are my adaptations
- 3/4 cup good quality baking cocoa
- 1 teaspoon baking powder (heaping)
- 3/4 cup coconut oil
- 1/2 cup boiling water
- 1 tablespoon vanilla
- 1 c. Turbinado
- 2 eggs
- 1 1/3 cups whole wheat flour
- 1/4 teaspoon salt
- Set oven to 350°F.
- Lightly grease muffin pan
- In a medium bowl combine cocoa and baking powder; mix to combine.
- Add in boiling water; mix well with a wooden spoon to combine.
- Add in the melted coconut oil and vanilla; mix well.
- Add in the turbinado, mix well with a wooden spoon.
- Stir in eggs with a wooden spoon; mix until combined.
- Mix the flour with salt; add in the chocolate mixture; mix well to combine (batter will be a bit on the thin side).
- Using an ice cream scoop fill each of the muffin tins almost to the top.
- Bake for 25-30 minutes or until muffins are done, don’t over bake! (might take a little longer, depending on how full the muffin tins are with the batter).

- 1/2 cup coconut oil
- 1 cupturbinado
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup butter
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups rolled oats
- 2 apples cored and ran through the food processor
- Preheat oven to 350°.
- In mixing bowl cream coconut oil,butter,and sugars.
- Add eggs and vanilla until blended.
- Set aside.
- In separate bowl, combine dry ingredients.
- Combine wet and dry ingredients until moist. Then add apple.
- Drop on greased cookie sheet about 1-2 inches apart.
- Bake for 10 minutes or until golden brown.
- Remove from oven immedietly- if overcooked cookies get HARD.
These turned out really good. Not super sweet but full of healthy ingredients.
Banana Bread – I used this recipe
Here are my adaptations
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 3/4 cup turbinado
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups whole wheat flour
No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
We have not eaten the Banana Bread yet, it is still wrapped up in the freezer. However I have made it before and we love it. A nice lightly sweet bread.
