Apple Rhubarb Tea Bread
Apple Rhubarb Tea bread was also one of the items I baked during my freezer baking session. The original recipe came from here. I made a few changes and made 2 loaves of this bread.
* 1 1/2 eggs
* 1/2 cup apple sauce
* 3/4 cup Turbinado
* 1 teaspoon vanilla
* 1 1/4 cups rhubarb, chopped
* 2 apples cored and chopped in food processor
* 1 1/2 cups whole wheat flour
* 1 teaspoon baking soda
* 1 teaspoon cinnamon
* 1/2 teaspoon salt
* 1/4 teaspoon baking powder
* 1/4 teaspoon nutmeg
1. Beat eggs until thick and foamy.
2. Add applesauce, sugar, vanilla.
3. Beat well.
4. Stir in rhubarb, apples.
5. Add remaining ingredients.
6. Mix well.
7. Pour into grease loaf pan
8. Bake at 350° for 55-60 minutes
We pulled one of these out of the freezer this week when I knew we would have a crazy busy morning. We sliced some up for breakfast and it was delicious. Everyone loved it and the entire loaf was gone before the day was over.
