Apple Date Oatmeal Cookies
Here is another recipe from my baking day. You can check out a picture of most of the items here. I made a few minor changes to this recipe according to what I had on hand. You can check out there original recipe here.
- 1/2 cup organic butter
- 3/4 cup turbinado
- 3 eggs
- 1 1/2 cups whole wheat flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup almond milk
- 2 cups rolled oats (quick cooking or regular – not instant)
- 1 1/2 cups chopped dates
- 1 apple cored and ran through the food processor
- Preheat the oven to 350 degrees.
- Cream together the butter, turbinado, and eggs.
- In a different bowl combine the flour through nutmeg.
- Add the flour to the butter mixture alternating with the milk until it is all combined.
- Stir in the oatmeal, apple and dates.
- Drop by teaspoons onto a cookie sheet sprayed with cooking spray.
- Bake for 10-12 minutes or until slightly browned.
- Immediately remove from pans onto a rack to cool.
Once thoroughly cooled line a sheet pan and put in the freezer to flash freeze for about 15-20 minutes. Then put the cookies into a labeled freezer bags.
These came out so yummy! I had to start freezing them quickly because everyone was scarfing them down.
