Yummy Berry Muffins

To see a photo of some of my baking bounty you can go here.  My inspiration for these muffins came from a recipe for Berry Smash Muffins. The original recipe looks so good but I didn’t have any fresh berries on hand.  Instead I had 2 small bags of dried berries.  Each bag contained Blueberries, Cranberries, Cherries, Raspberries and plums.

So here is what I did:

* 1 6oz. Bag Mariani dried mixed berries
* 2/3 cup turbinado
* 1/3 cup coconut oil
* 2 eggs
* 1 1/2 cup whole wheat flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon

1 Heat oven to 425 F.
2 Grease muffin pan
3 Stir in sugar (turbinado), oil and eggs until mixed.
4 Stir in other ingredients just until moistened.
5 Spoon batter into muffin cups.
6 Bake 15 to 18 minutes or until light golden brown or toothpick poked in center comes out clean.
7 Cool Completely
8 Line cooled muffins on a sheet pan and put in the freezer for approx. 20 minutes to flash freeze then put in labeled freezer bag and return to freezer.

I made 2 batches of these and they tasted really good.
