Apple Date Loaf
Sadly I did not take individual photos of each item as I was baking. You can check out the packaged items here.
One of the types of dried fruit I purchased on markdown was Dates. I had never tasted dates before but I was willing to give them a try.
I found this recipe for Mrs. Allen’s Date Loaf and I made changes to fit what I had on hand.
* 1 3/4 cups whole wheat flour
* 1 teaspoon baking soda
* 3/4 cup turbinado
* 1 egg, beaten
* 1 cup chopped dates (I ran mine through the food processor)
* 2 tablespoons butter
* 1 apple (cored and chopped in food processor)
* 1 cup boiling water
* 1/2 teaspoon salt
* 1 teaspoon vanilla
1 Heat oven to 350F, lightly grease a loaf pan.
2 Mix the dates, butter& boiling water, set aside& cool.
3 When cooled mix in the beaten egg & sugar.
4 Mix the flour, baking soda & salt together.
5 Add dry ingredients to the batter.
6 Add apple and vanilla, blend well.
7 Pour into the prepared loaf pan.
8 Bake in 350F oven for 50-60 minutes or until a wooden skewer comes out clean when inserted in the center.
You will find that on most of the recipes I make I cut down on the sugar and I use most all organic ingredients.
We have not tasted this one but let me just say that it smelled so good!
Once it was done I removed it from the bread pan and let it cool fully. Once it was cool I set it on a sheet pan in the freezer for 20-30 minutes to let it flash freeze then put it into a labeled freezer bags.
