Healthy Meaty Chip Dip

I know that I have mentioned a couple times lately that eating out is getting less and less appealing to us.  Over the last couple weekends I have made a delicious healthy version of our favorite chip dip and it has been a hit.  Weekend before last I did a full meat version and last weekend I did a meat and bean version, both were a success.

The full Meat Version:

  • 1lb Laura’s Lean Ground Beef (Vegetarian fed, no hormone’s, antibiotics, etc)
  • 3/4 Jar Frog Ranch All Natural Chunky Salsa
  • 1/2 block All Natural Cheddar Cheese shredded
  • all natural sour cream
  • whole grain tortilla chips for dipping

Brown the meat then add in salsa and shredded cheese.  Stir and cook on low heat until cheese is melted and bubbly.  Divide into bowls and top with sour cream.  Dip your chips and enjoy!

On the meat bean version I used 1/2 lb of the Beef and 2 cans organic black beans drained and rinsed.  Everything else in the recipe was done the same.
