Homemade Chicken Nuggets…..Kinda

During last weeks cookfest I was trying to come up with meals that would be halfway easy. Especially since I was cooking every single meal and my girls were on Spring break.
One day for lunch I thought I would try to make a healthier homemade chicken nugget. Granted these are nothing at all like McD’s nuggets, to me they were better!
Emeri wasn’t home so this was lunch just for the 3 of us.
I took 2 chicken breasts and cut them up into small pieces with my kitchen shears. In a small bowl I added just a little bit of whole wheat flour, pepper, salt and garlic. I lightly dredged the chicken in the flour mixture then cooked them in the skillet with a little organic extra virgin olive oil. These were not very bready, but they had a little spice and they were good.
I served them with fresh fruits and veggies and we dipped the chicken in spicy mustard.
It made for a very yummy and easy lunch!

i use italian bread crumbs. i add just a lil extra garlic and onion powder. it will make them more like chick fila instead of mcdonalds. just dip in egg then bread crumbs and bake or fry in skillet.
