Black Bean Tacos

We are normally a soft taco kind of family however when I was shopping last week I found one box of Garden of Eatin taco kit marked down at Kroger.   So Monday I planned to have Black Bean Tacos because I needed something super easy.  It was Emeri’s first night of dress rehearsal for Hello Dolly and I new I would be spending plenty of time getting her ready.  Then I had to get her there by 5:30 which means we had to eat earlier than usual.

I often do black bean or black bean and rice in burritos or soft shelled tacos.  They are filling and yummy and very cheap.  Not to mention that they are a meat saver.

So how do I make this yummy meal?  Simple

Take 1 can of black beans drain and rinse

Add to a skillet along with 2/3 cup water and taco seasoning packet

Warm up the beans with the taco seasoning just as you would do if you were adding the seasoning to meat

This is just enough beans for the 4 of us with no leftovers.  If I want to add rice I cook 1/4-1/2 cup rice per rice cooking directions and then add it to the beans above in the skillet with the taco seasoning.  Then I just fill whatever kind of shell we are using and top with whatever toppings we have on hand.

On this night are black bean tacos had black bean mixture, raw baby spinach, provolone cheese and a some ranch dressing.

This is one of those meals where you can just use any fresh veggies, salad fixings, kind of cheese, you happen to have on hand.  Salsa, sour cream or ranch are also great to top the tacos.
