Whole Crockpot Chicken
When I visited the Co-op a few weeks ago I was able to purchase 3 whole chickens from an Amish Farm that were marked down at a great price. This past weekend we finally had the opportunity to eat one and it was delicious!

I find the easiest way to cook a whole chicken is in the crockpot. My crockpot is kind of oblong shaped so it works perfectly. I just lay the thawed chicken in the crockpot and then season. I have seasoned many different ways; with salt, pepper and garlic, or with my favorite salad dressing drizzled on top. However this time I drizzled a little Balsamic Vinegar and Extra Virgin Olive Oil on top.
I cooked on low for 7 hrs and it was done! That simple.
Now crockpots will vary so you may have to play around with it to get the timing right. The original recipe I found a long while back said to cook 8-10 hrs depending on the crockpot. I cooked it 8 and it was a little dry. Then I tried 7 1/2 and I finally found 7 to be the perfect time for my crockpot.

This I served with Organic French Style Green beans, banana slices and blood orange slices.
My girls can demolish a whole chicken. I can assume that if I have a 4-5lb whole chicken it will be gone that night.
