Really Good Vegetarian Meatloaf

I tried posting this earlier but everytime I did it totally messed up my side bar.  I am really not sure what that was all about but I am going to try it again.

I made this recipe pretty much the same as the original however I added an 1/8 cup salsa to the mixture then topped the meatloaf with salsa.

We really enjoyed it, the flavor was quite good.  However I do not think this recipe could take the place of my meatloaf made with real beef. ;)   This mock meatloaf is a great alternative, high in protein and low in cost.

    Debbie we are trying to eat less meat also. We still enjoy our meat however we are trying to eat it only 2 or 3 dinners a week. :)
