Southwestern Frittata

Tuesday night we had a Southwestern Frittata and it was yummy!  You can find the original recipe here.

Here is my version:
6 Cage free Eggs
1/2 cup salsa, plus 2 tablespoons for garnish (I used a very chunky salsa)
1/2 cup shredded cheddar cheese
1 TBS. dehydrated organic minced onion
a sprinkling of garlic powder

In a small bowl, whisk together the eggs, onion, garlic and 1/2 cup of the salsa. Pour the egg mixture into the skillet with the vegetables and cook. I do not have a cast iron skillet so I had to do the Frittata completely on the stove top. I put the heat between low and medium and put the lid on the skillet. Cooking it through took a little patience but it did cook through. I am not exactly sure how long it took. Sprinkle with cheddar cheese.

I served it with potatoes that I peeled, diced and baked in the oven at 425 for about 40-45 minutes.  We also had sliced fresh fruit.  This was a great dinner! :)
