Super Easy Black Beans and Rice

When it comes to cooking “Easy” is my style!  In the beginning of our marriage I cooked hamburger helper one too many times and I don’t know if my husband will ever let me live it down.

In my experience “easy” food often turns in to not so healthy food or even worse, take out.

Take out is fine in moderation but when I am always looking for the easiest way out the moderation thing can fly out the window. ;)

However since we have made the decision to change our eating habits I have really been sticking to our menu plan.  The key to this is to make it as easy as possible for me.

Last night we had Black Beans and Rice.  It is by no means a fancy meal but it is something we all enjoy and it is really easy.

Here is what I used:

2 Cans Organic Black Beans drained and rinsed

1/2c. long grain rice

Chili Seasoning

1/4 c. water

I cooked the rice according to the package.  The rice is Kroger brand and not organic, I have probably a few more cups to use up before I run out. Once the rice was done I added the black beans to the pot, the water and the chili seasoning.  I stirred them together and let the seasonings simmer for a few minutes until the beans are warmed through.  If you have chili or taco seasoning in the packet you can use that, I have done it many times and just follow the directions as if you were adding it to ground beef.  If not you can click on “chili seasoning” above to get a recipe.

Basically that is it.  When I make it with Taco seasoning we add it to our tortillas in place of meat and it is delicious.

Last night I served it with organic mixed green salad drizzled with Annie’s Cowgirl Ranch Dressing and Green Giant White Corn (not organic but the white corn has no sauce, it is only white corn.)
