Enter the Mission Menus Challenge With Your Budget Friendly Recipe

We love tortillas in this house!  With two independent kids who like to fix snacks for themselves I try to keep tortillas on hand.  For a quick and easy snack they will heat up just about any kind of meat with shredded cheese in a Mission Flour Tortilla.  Having a nice healthy snack is important in this house, however we do not only use these tortillas for snacks

We eat a lot of Tacos and Burritos around here and one of our favorite Burrito recipes is for Breakfast Burritos.

To make these you need:

  • Mission Flour Tortillas
  • Eggs
  • Shredded Cheese
  • Sausage (we like kielbasa)
  • salsa

I dice the kielbasa and heat it up in a skillet over medium heat.  Then I add in the eggs and scramble them as they cook.   Finally I take the heated tortillas and layer them with a little salsa, shredded cheese and the egg/sausage mixture.  (I am not writing specific amount because that varies on your family size).  These are great served with homemade hashbrowns!
