Menu Plan Monday 3/8/10
Last week was a very successful week, finally!!
Monday I made pizza by rolling out 1 pkg of biscuits and topping with tomato sauce, 1/2 lb ground italian sausage, 1 bag Sargento pizza cheese. We had corn on the side. It was yummy!

On Tuesday I made this Sausage Potato Soup. I used 1/2lb ground Italian Sausage, doubled the potatoes and didn’t use peas. This was really good. I think this is the third potato soup we have tried this winter.

Wednesday I made this Turkey and Rice Casserole we loved it!

Friday was supposed to be easy or take out night but on Thursday my sinuses were killing me so I called hubby and he brought home Little Caesars Pizza.
I didn’t think we would have my nieces this weekend however they ended up staying. Friday night we had one of our favorites, Lentil Chili with shredded cheese, natural sour cream and tortilla chips.

On Saturday I was supposed to make Tuna Patty Burger but I had 4 hungry girls and I just wanted something really fast and easy, the Tuna Burgers were not easy last time. So I found this recipe on Recipezaar but now I can’t find it. It’s a basic cheese sauce, with 2 cans tuna added and poured over cooked pasta. However we all decided it could use more cheese, more pepper and more tuna. Everyone ate it but it could have been better. I served it with a romaine salad and a biscuit.

Today I cooked at lunch not at dinner. I broiled center cut boneless pork chops that were rubbed down in Lawry’s Seasoned salt. We made sandwiches on toasted wheat and added a slice of colby monterrey jack cheese. We had sliced cucumber soaked in olive oil and vinegar on the side.

This week Gary and Jonah will be out of town Thursday, Friday and Saturday night on a church trip to Tennessee. Emeri and I can’t go because Emeri has a full day of Music contest on Saturday that she can’t miss.
Here is this weeks Menu
Monday: Turkey Breast Roast, Oven Roasted Potatoes, Salad
Tuesday: Garlic Lentil Soup (with my adaptions)
Wednesday: Steak, Alton Brown’s Baked Brown Rice, Corn
Thursday through Saturday Emeri and I will be eating easy to cook items, not sure yet what that will be but I will let you know next week.
Breakfasts: Cereal, Oatmeal, Eggs, Fruit, Yogurt
Lunches/Snacks: Tuna or Peanut Butter Sandwiches, fruits and veggies, yogurt, cheese, popcorn
