Hearty Turkey and Rice Casserole

We had this delicious Turkey and Rice Casserole on Wednesday night. I adapted it from this recipe on recipezaar.
Here is my version:
- 3/4 – 1lb Shredded Cooked Turkey
- 1 cup partially cooked brown rice
- 1 can green beans drained
- 1 can corn drained
- 2 cans cream of chicken soup
- 2 tablespoons soy sauce
- 1 teaspoon cajun seasoning
- 1 can milk
- 1 onion diced
- 4 stalks celery diced
- 1Tbs canola oil
- garlic and pepper to taste
Directions
Saute onion and celery in oil until they start getting soft, about 4 or 5 minutes. Then combine 1st 4 ingredients. Combine chicken soup with soy sauce, seasonings and milk. Stir til combined. Mix into remaining ingredients in casserole dish. Bake at 350 for 40 – 45 minutes or until bubbly.
This turned out really good! Everyone loved it even Jonah. It was different to have a non-cheesy casserole but it worked. It was very hearty and filling. I would think that many other veggies would work well added into this casserole.
