Menu Plan Monday 3/1/10
Do you ever feel like you just can’t stay on track? I know that I do! I am 2 full months through 2010 and I don’t think I have completed one full week of my menu plan yet.
So here is how this week went! I have a sister who is having health problems, her girls came to stay at my house on the 22nd. They stayed that weekend then went to my Mom’s on Monday and Tuesday night.
On Monday we had boneless Pork Chops. I rubbed them down with Lawry’s seasoned salt and cooked them on the George Foreman. We also had green beans and Mexican Rice.

On Tuesday my hubby treated me out to dinner and not our usual McDonald’s dollar menu. Not that we have any real amazing restaurants around here, however we went to Chili’s and it was delicious. Haven’t been there in a very long time. I did my best to pretend like there wasn’t a bill!!
On Wednesday my nieces were back and we had the Turkey soup I made from the Turkey I cooked the previous weekend. I served warm biscuits on the side and it was delish. There were no leftovers!

On Thursday night my nieces stayed all night with my Mom again and we made a spur of the moment over night family trip. We took Emeri and Jonah and got a hotel in Paducah Ky. for the night. We swam in the pool, went out to dinner and skipped school the next day.
When we got back on Friday I picked up my nieces and took all 4 girls grocery shopping. That was interesting to say the least! LOL
So Friday, Saturday and Sunday my nieces stay at our house and I served sandwiches every night!! How pitiful is that? I was tired and there is a lot to do with 4 girls running around the house and cooking wasn’t high on my priority list.
This week my nieces will be staying with my Mom and my other sister and I am going to miss them!!
So here is our plan for this week (I am keeping my fingers crossed that I stick to it)
Monday: Homemade Pizza, Corn
Tuesday: Potato Sausage Soup (I will be tweaking it a bit)
Wednesday: Turkey Rice Casserole
Thursday: Lentil Chili
Friday: Something easy after shopping
Saturday: Tuna Patty Burgers, Oven Fries
Breakfasts: Fresh Fruit, Yogurt, Oatmeal, Eggs
Lunch/Snacks: Peanut Butter or Tuna Sandwiches, fresh fruit and/or veggies, yogurt, granola bars, popcorn
