Menu Plan Monday 2/22/10
I’m going to tell you right up front that last weeks menu was a bust. I had been feeling bad for a little while due to some complications from previous surgeries and by Tuesday I was feeling horrible.
Monday I did make the chicken Tacos and they were delicious. I cooked and shredded 2 boneless chicken breasts then added in some brown rice and taco seasoning. We layered it on whole wheat tortillas with diced tomatoes, natural sour cream and shredded cheese. They were yummy.

I didn’t cook Tuesday through Friday. I was feeling really terrible and most of those nights hubby and the kids ate sandwiches. One night he did get them McDonald’s take out.
Finally by Saturday I was starting to feel pretty decent. My 2 nieces were over and I had a thawed Turkey in the fridge that I had planned to cook on Thursday. So I cooked the Turkey along with boiled potatoes and corn.
The kids devoured that Turkey!! I did end up with about 2lbs of shredded meat left over.

There are going to be several repeats this week. Since I didn’t cook hardly any of my meals last week.
Monday: Pork Chops, Easy Mexican Rice, Corn
Tuesday: Turkey Soup made with leftovers from our Turkey dinner
Wednesday: Omelettes, Biscuits
Thursday: Turkey and Rice Casserole
Friday: Homemade Pizza
Saturday: To be Decided
Breakfasts: Oatmeal, Eggs, Cereal, Fruit, Yogurt
Lunches/Snacks: Peanut Butter Sandwiches, Tuna Sandwiches, Granola Bars, Yogurt, Fruit and Veggies
