Easy Mexican Rice

Tonight I made Easy Mexican Rice to go along with our dinner.
This is the original Recipe as found on Recipezaar.
- 1/4-1/3 cup finely chopped onion
- 2-3 tablespoons olive oil (or bacon drippings)
- 1 1/4 cups parboiled long-grain rice
- 1 (14 ounce) can chicken broth
- 1 (8 ounce) can tomato sauce
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
Directions Over medium-high heat, sauté onion in olive oil until tender; add rice and continue sautéing for 3-5 minutes until rice becomes opaque. Add chicken broth, tomato sauce, and seasonings; bring to boil then reduce heat to low; cover and simmer 20-25 minutes until rice is cooked. Remove pan from heat; let stand covered for 5 minutes until liquid is absorbed; fluff with fork and serve.
I made a couple changes. I had no chicken broth so instead I used water with part of a packet of onion soup mix. I also left out the fresh onion. Other than that I followed the recipe. Everyone loved it and was hoping for more however this only made 1 serving a piece for us. Emeri and I put a little bit of natural sour cream on top and it was really good.

Sounds good! Lately I’ve been cooking plain rice, then stirring in some salsa, but your recipe sounds better than that.
We eat a lot of brown rice but none of us like it plain and boring so have tried several recipes to spice it up!
We love any and all rice in this house. I love making different rice recipes.
