Menu Plan Monday 2/1/10
Last weeks menu went fairly well with just a minor change or two.
We started off Monday night with Tuna Patty Burgers and Oven fries. They tasted delicious although there were a few mishaps while cooking. You can read about that here.
I will make these again.

Tuesday hubby was gone and the girls and I were supposed to eat the stew I made with the leftovers from the pot roast. However it hadn’t thawed even though I had taken it out of the freezer the night before. I was tired and didn’t have any other meat thawed out so we went to McDonald’s. Oh well, I figured hubby was off eating somewhere much nicer than McDonalds so it didn’t hurt for us to spend the $10 there.
Wednesday we were able to eat the stew. I made it by taking all the drippings from the bottom of the crockpot including some onions, carrots and potatoes and added a can of corn, a can of peas, a can of diced tomatoes, lentil and some water to cover everything up. Lots of spices and let it go in the crock pot for a couple of hours.
It was very yummy!! Although it had no meat it tasted like the roast meat from all the drippings. The girls loved it.

Thursday we had planned on soup and sandwiches but the girls didn’t want soup/stew again so I whipped up this pasta. I cooked up some rotini in one pan and in the other I sauteed onion and garlic, then added in a can of rotel and a can of drained boneless salmon, and plenty of spices. I also cut up a bunch of just the little bitty flower part of broccoli, to please Jonah. When the pasta was done I tossed it together with the connoction I made up and we sprinkled on a little cheese and it was really good. Everyone cleaned their plate.

Friday we were supposed to have the crock pot chicken however Jonah was going to a slumber party and wanted us to wait for her so intead we had a frozen pizza and watched a movie.
Saturday night I made the crockpot chicken and it was sooooo good!! I also made the Italian rice and beans however I only had red beans, no white. It was very good though!

Finally on Sunday we had a Chicken and Rice soup that I made with some of the stock I got from the crockpot chicken. You can see the steam coming off of it in the picture. It was really good. I was also able to put a couple containers of stock in the freezer.

Now on to this week.
Monday: Chicken Pasta Skillet, Corn
Tuesday: Lentil Chili, Organic Corn Chips, Shred Cheese
Wednesday: Beef Pot Roast, Carrots, Potatoes
Thursday: Brown rice and Lentil Casserole
Friday: Tacos, Easy Mexican Rice (that we didn’t get to last week)
Saturday: Out of Town for 16th Anniversary
Sunday: Out of Town
Breakfasts: Oatmeal, Eggs, Yogurt, Bananas, Muffins
Lunches/Snacks: Peanut butter Sandwiches, Chicken and Rice (made a bunch and froze individual servings), fruit & veggies, nuts. Stuff I got on markdown: Organic chips, organic trail mix, organic yogurt covered raisins and organic corn chips
