Menu Plan Monday January 18
My Hubby and I had a discussion this weekend about how we have been off track since Christmas. In the past 3 weeks we haven’t fully completed one menu plan. Yes I am the one who cooks however I will let you know that I am not so strong willed when he volunteers to bring home something easy or the kids ask for something easy.
Well sometimes I am strong willed about it, but other times like when life is crazy insane I am not.
I am sure you all can feel the pain of a super busy life. Last weekend my sister was in ICU and her kids stayed with us all weekend. Then monday we had a free night Tuesday was Upward Basketball at Church. Wednesday we had my nieces again and one of them was ill. Then Hubby was ill on Thursday and Friday. Thursday was Upward at Church again. This weekend however was a lot more peaceful.
Last Monday night we had Pork Chops rubbed with Lawry’s and cooked on the George Foreman. They where bone-in and not the leanest cut (I got them for a steal) so after I cooked them I removed the fat and the bones before serving. I did make the Quick Spanish Rice however it was way too spicy. I am not sure if I misread the ingredients or what. So at the last minute I cooked up some Rotini and melted some cheddar on it. We ended up with corn instead of Green beans because Jonah prefers corn.

On Tuesday we had BBQ Pork Sandwiches served on wheat buns with Organic Blue Corn Chips. Super easy meal, loved by all in our house.

On Wednesday I did make the Brown Rice and Lentil casserole but something went wrong. I was trying to adjust the amount of ingredients to make more and instead of just doubling it I decided to make it a half more than what it was. I was tired, long week of hospital and too many other things that I apparently should not have been doing math.
I ended up with too much liquid and by the time I got the liquid down I had a big mushy mess. So we had Dollar menu for dinner instead.
On Thursday hubby was not well, I was exhausted from all that had went on during the week and I didn’t want to do anything at all that day. I mean nothing. So when dinner time rolled around I opted for drive thru.
On friday hubby and I decided their would be NO take out that night like usual because we had already done that 2x this week. So I did the grocery shopping and we had a Free for All night. Basically where the kids can choose what they want for dinner. Sandwiches, Cereal, whatever makes them happy.
Saturday I made this Lentil Chili and it was yummy! Even Jonah my picky one loved it. I served it with shredded cheese, natural sour cream and Organic blue corn chips.

Sunday we had Cheese Omelets and Toast.
Now for this weeks Menu:
Monday: Lentil Tacos and salad
Tuesday: Not sure yet something super easy. Hubby has about 15-20 minutes from the time he gets home from work and has to be at church
Wednesday: Pot Roast with Potatoes and Carrots
Thursday: Pancakes and Homeade Cinnamon Syrup
Friday: Going to Friends House
Saturday: Steak, Quick Spanish Rice, Green Beans (I am going to try the rice again and adjust spices)
Sunday: Take Out
Breakfasts: Yogurt, Fresh Fruit, Oatmeal or Organic Cereal
Lunch/Snacks: Organic Burritos, Peanut Butter or Tuna Sandwiches, Fresh Fruit and Veggies, Yogurt, Cheese or Nuts
