Menu Plan Monday 1/11/10

A new week and a new Menu Plan. This week I am hoping that we actually get through the whole plan.
On Monday we had Steak, I just rubbed it down with Lawry’s Seasoned Salt and cooked it on the George Foreman. I had planned on making rice but hubby requested Baked Potatoes. We topped the potatoes with just a little shredded cheese and then we also had green beans. Yummy dinner for all.

On Tuesday I was planning the Fabulous Beef Stew, however I didn’t realize I was out of canned tomatoes. So it was minus tomatoes and corn starch and it came out more like a soup than a stew but it was still delicious.

Wednesday we had a plumbing emergency. Hubby had to stay home from work and we had several trips to the hardware store and Rent All place. He ended up renting a Power Auger and got everything thing fixed right up. However after such a crazy busy day we ended up having McDonald’s Drive Thru. NOT Jillian approved!
Thursday was the Broccoli Frittata. We skipped the Bacon and fresh tomatoes (there were no decent looking tomatoes at Kroger) and topped it with some shredded cheese. Everyone loved it but Jonah. Jonah ate it but she didn’t like all the broccoli florets.
My plan for next time is to use less broccoli and chop it super fine. Hubby requested I add diced green peppers and we will add the meat next time.

Friday the kids wer not gone and we ended up with my two nieces due to a family emergency. So we rented a movie and had pizza.
Saturday I spent most of the day at the hospital with my sister and by the time I got home that night hubby had already ordered a pizza for all the kids to have dinner.
Sunday might normally be our easy or eat out day but since we had already eaten out (or gotten carry out) 3 times this week and we still had our neices I figured I better cook. I used 1 lb Laura’s lean ground beef and browned it and then added 1/2 cup lentils and taco seasoning. When the lentils were cooked I melted in 1 cup shredded cheese and we put this on buns like we would sloppy joes. I served it with corn and fried potatoes.
I am hoping and praying for a calm and normal week.
Monday: Pork Chops, Quick Spanish Rice, Greens Beans
Tuesday: BBQ Sandwiches and Organic Blue Corn Chips
Wednesday: Brown Rice and Lentil Casserole, Sliced Cucumbers
Thursday: Pancakes and Homemade Cinnamon Syrup
Friday: Take out Night
Saturday: Lentil Chili, Organic Tortilla Chips, Sour Cream and Shred Cheese
Sunday: Something easy
Breakfasts: Organic Cereal, Oatmeal, Eggs, Fresh Fruit
Lunch/Snacks: Organic Burritos, Tuna or Peanut Butter Sandwiches, Fressh fruit and veggies, nuts
