Menu Plan Monday 1/4

When I wrote out my mini-menu plan last week I had a feeling with all the being out of town that I would fall of the cooking wagon.
Monday night I did make the above Cheeseburgers on the George Foreman and the oven fries and it was delish. After that it was all down the drain.
Tuesday we headed to my hubby’s brothers and that night we had take out from Lee’s Chicken. We had never eaten it before and it was yummy.
Wednesday night we all went to Olive Garden for dinner. This was nice since our closest Olive Garden is nearly an hour away.
Thursday night we were back in Illinois and we went to my BFF’s house for New Years Eve. They had a fish fry, talk about yummy.
We got home around 2:30am Friday and so we slept in, late!
I did all my grocery shopping on Friday evening and didn’t get home until 8:30pm so dinner ended up being a Free For All!
Saturday we headed to my Sister in Law’s and I made my famous Homemade Chili and I brough along my girls favorite Snickerdoodle Blondies for dessert.
Today we headed to my grandparents for a belated Christmas Dinner.
Now I am ready to things back to normal. Jillian would not have approved of my diet this week!
Monday: Steak, Quick Spanish Rice and Green Beans
Tuesday: Fabulous Beef Stew
Wednesday: Brown Rice and Lentil Casserole
Thursday: Broccoli Frittata
Friday: Girls may be gone this night. TBA
Saturday: Pork Chops, Mashed Potatoes, Corn
Sunday: Something Easy
Breakfasts: Eggs, Oatmeal, Cold Organic Cereal, Bananas, Apples
Lunches/Snacks: Peanut Butter or Tuna/Salmon Sandwiches, raw fruits and veggies, nuts, muffins from the freezer, Organic Burritos
