My Family’s Favorite Banana Muffins

I realize these are not really muffin shape, I was lazy and just baked them in an 8 X 8 square pan.
I can make a batch of these and they are gone that day without fail.
I got the recipe here, and only make one real change.
- 3 large bananas
- 1/2 cup sugar
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cups all purpose flour
- 1/3 cup applesauce
Mash bananas, add sugar and the slightly beaten egg. Stir in melted butter or applesauce. Stir in dry ingredients. Spoon into medium size muffin pan. Bake 20 minutes at 350F degrees – 375F degrees.
When I bake in the 8 X 8 pan it goes in for about 30-35 minutes.
My girls also love them when I use these add-ins
*1 Cup Walnuts or
*1/4 Peanut Butter

I like that this has applesauce instead of fat. And I like your idea of cooking it in a pan

Brenda, we use applesauce in all our muffin recipes instead of the butter or oil. My girls love them that way!! ~Amber

I am a muffin person but never made banana muffins. Made banana bread and probably banana cake but not muffins. Now, you have provided me with a great recipe. Love that you gave applesauce as a choice instead of a fat.
