Menu Plan Monday 12/21

With Christmas this week my menu will be a little short since we will be eating away a couple times and that is perfectly fine with me.

Last week we had Turkey, Cold Pasta Salad and Mock Potatoes, however I did not blend the cauliflower.  I just did a coarse chop of them and add the other ingredients.  They turned out tasty.

The Leek and Potato soup came out so yummy!  Perfect comfort food on a cold night.

For Emeri’s choice on Wednesday I made the Lentil Tacos except we went a little more burrito style.  I used whole wheat Tortillas and layered refried beans, lentil and rice mixture, tomatoes, cheese and sourcream then rolled them up.   They were so yummy!!

I also made Snickerdoodle Blondies for dessert.

Thursday I made the Black bean and Rice Casserole, however there were a couple of changes.  I actually used pinto beans because that was all I had and I used Turkey instead of chicken.  I also doubled the rice and halved the cheese. This was really yummy.

Friday we had a date night and Saturday we were gone nearly all day so our eating ended up just being snacky stuff throughout the day.

On to this weeks plan:

Monday:  Salmon Patties, Oven Fries, Corn

Tuesday:  Lunch (family over) Chili Dogs,  Dinner:  Pork Cacciatore over Brown rice

Wednesday:  Steak and Potatoes

Thursday:  Christmas eve at my Mom’s eating Sandwiches, finger foods and cookies

Friday:  Christmas Lunch at my Grandma’s, I need to bring Dessert.  Take the girls to the movies that evening.  Gonna see the new Chipmunks.

Saturday:  Free For All

Breakfasts:  Kashi Cereal, Eggs, Oatmeal or Fruit

Lunches/Snacks:  Peanut Butter and Honey Sandwiches,  Tuna or Salmon Sandwiches, Fruit and yogurt, Nuts, Cheese

    I’m so glad that my husband isn’t working on Christmas Eve and Christmas. He really needs the days off. This is the best family Christmas gift!

    Thanks Rona,
    This year my hubby is taking vacation time for an extended Christmas Break while the kids are home. He will be off from Christmas Eve until January 3rd. We are excited.
