Last weeks menu turned out well, only one night (Thursday) did it get changed.

We had Brown Rice and Lentil Casserole which came out delicious!

I also made the Healthier Cheeseburger Soup.  This was excellent on a cold night.  Very comforting!

Next came the BBQ Chicken Sandwiches.  These are super easy.  I just put a couple pounds of boneless skinless chicken breast in the crock pot with a bottle of BBQ sauce on high and cooked until the meat was falling apart.  We had it with mashed sweet mashed potatoes and salad.

Thursday we were gone all day!  I had to drive hubby to work, I did my grocery shopping that morning instead of on friday.  Then I had to take the girls to the dentist that afternoon and running around to a few more stores.  By the time we drove into our home town that night it was 8pm and I still had a trunk full of stuff to put away.  So we drove through McDonald’s and ate off the $1 menu.

Friday I made the Broccoli Casserole, I used 2 bags of frozen broccoli.  I used Cream of Chicken instead of Cream of mushroom and I didn’t to the topping.  However I added 2 cans of drained Tuna and used only 1 cup of cheese.  This came out really yummy.

Now for this week

Monday:  Turkey, Mock Mashed Potatoes, Green Beans

Tuesday:  Leek and Potato Soup

Wednesday:  Emeri’s 14th Bday, her choice.  She hasn’t decided yet, it may be pizza.  We are having a family night in with food, movies and cake.

Thursday: Brown Rice and Black Bean Casserole with Turkey

Friday:  Kids will be gone! Having date after the Church Christmas Cantata

Saturday:  Lentil Tacos, refried beans, corn (from last week)

Breakfasts:  Organic Cereal, Oatmeal, Eggs or Fruit and Yogurt

Snacks/Lunches:  Peanut Butter and Honey Sandwiches, Tuna Sandwiches, Salad, Fruit and Veggies, Yogurt, Cottage Cheese, Nuts or Cheese Chunks
