Baked Pear and Walnut Oatmeal

I found this great recipe at Beauty and Bedlam and tweaked it just a bit to fit what we had on hand.

  • 4 cups milk
  • 1/2 cup brown sugar
  • 2 TB butter
  • 1/2 tsp cinnamon
  • dash of salt
  • 2 cups Scottish Oatmeal
  • 2 Pears diced
  • 1 cup chopped Walnuts

Preheat oven to 350°. Bring milk, sugar, butter, salt and cinnamon to boil in a heavy pot.  Add the remaining ingredients and bake uncovered for 30-35 minutes in buttered casserole dish.

This turned out really delicious however the kids didn’t think it was sweet enough so they put a little milk and extra sugar over their oatmeal.  Hubby thought it was perfect!  Next time I will probably use 3/4 cup brown sugar and we will also try it with the apples. Great easy recipe.

    This sounds delicious. I may give this a try making this in the crockpot. Have you done that? I host a weekly blog event called Crock Pot Wednesday. I’d love for you to come join me in that. I’ll let you know how the crock pot version of this turns out.

    I have not tried it in the crock pot, this was my very first time making it. However that would be wonderful!! Please let me know how it turns out. :)

  3. Have you ever tried making this with soaked oats? (Oats have a lot of phytic acid.) I may try that, it looks so good! Thanks for joining in on Real Food Wednesday!

    I have never used soaked oats, to be honest I have read recipes that used soaked oat but wasn’t quite sure what to do!! LOL
