Last week I was terribly sick and didn’t menu plan and things just didn’t go so well. I am feeling much better this week however still not 100%.
Last night we made beef and bean burritos, I went in to take a picture and my sd card wasn’t in my camera so I just decided to skip the picture.
This is our plan for the rest of the week.
Breakfasts options: eggs, sausage, toast, yogurt, fruit, oatmeal
Lunch options: tuna salad sandwiches, pb&j, yogurt, fruit/veggies, granola bar, cheese, nuts
Tuesday: Out to eat – normally our Friday eat out consists of getting take out and usually our oldest daughter is not home. We planned a sit down eat out where she could actually be there.
Wednesday: Chili Dogs
Thursday: Salsa Chicken from the freezer
Friday: I imagine we will still most likely get takeout
Meals will be served with fruits/veggies, sides
So my husband had to go out of town for work last week. He left early Monday and arrived home late Thursday. I had been trying to fight off some type of sinus headache and decided the girls and I would just wing it while he was gone.
Monday was busy and we ended up not eating until around 8:30 at night, at that time my daughters ran to get us each a sandwich from the $1 menu.
On Tuesday I was feeling much worse so that evening we put together really quick meatless pizzas and that was good enough for us.
As the week went on I seemed to feel worse everyday. On Wednesday my oldest daughter used the rest of the spaghetti sauce that we had used for pizza sauce and made a quick and easy pasta for dinner.
On Thursday evening I don’t really remember leaving my room. At some point I woke up and had some sprite and saltines, not really sure what the girls ate but I am pretty sure at 18 and 15 they didn’t starve.
Friday should have been our eat out day but I wasn’t in any shape to go anywhere, if I recall correctly we had McDonalds
I practically slept through Saturday and Sunday. My husband was home and I didn’t have to worry about the girls so I just rested and tried to get better. I honestly don’t remember much about Saturday at all. However yesterday I do know we had sub sandwiches, chips and brownies.
This morning I woke up feeling better than I have in about 2 weeks. I am not 100% but I am so much better than I was. Ready for a new week!
